For a yummy and filling breakfast for one, try this interesting twist on porridge!
You will need:
3/4 cup hot water
1/3 cup rolled oats
1 small pear, cored & chopped into chunks
1/2 cup cold water
2 tablespoons frozen blueberries, thawed
2 little saucepans
What to do:
In saucepan 1, combine the hot water and oats. Cook over medium heat, stirring for about 5minutes or until porridge is thick and creamy.
In saucepan 2, place pear and cold water, bring to a boil. Reduce heat and simmer, uncovered, for about 5 minutes or until pear has softened.
Serve porridge topped with pears and 1tablespoon of the poaching liquid. Sprinkle with berries.
