Orange, Fennel and Almond Salad

When it’s time to eat and there’s only 1 of you, try this quick and easy salad:

You will need:
1/3 cup fresh orange juice
2 teaspoons almond oil
1 baby fennel bulb
1 large orange, segmented
50g baby spinach leaves
1/4 cup flaked almonds

What to do:
Place juice in a small saucepan and bring to the boil. Boil, uncovered, until juice reduces to 1 tablespoon. Cool for 10 minutes and combine with oil in a small jug

Slice fennel thinly, leaving tips aside for garnish.

Combine fennel with orange, spinach and nuts in a medium bowl, and toss to combine.

Serve and drizzle with dressing and sprinkle with fennel tips
